The scent of sizzling spices and the warmth of international camaraderie are bringing a new dimension to the Palm Springs Sister Cities educational college exchange initiative. With an exciting partnership between The College of the Desert (COD) and Universidad Tecnológica de San Miguel de Allende (UTSMA), a groundbreaking international culinary and hospitality exchange program is taking shape.

At its core, this initiative is designed to foster educational, cultural, and professional connections between students, bridging the gap between two vibrant culinary and hospitality communities. The initial program will provide students the opportunity to earn college work experience and internship credit as students and faculty immerse themselves in the rich traditions of Mexican gastronomy and hospitality while working alongside renowned chefs at the San Miguel y Sus Sabores Festival.

A Transformative Experience for Future Culinary Leaders

The significance of this program extends beyond a single trip. Participating COD students will gain hands-on experience, working under Executive Chef Cesar Enciso of the award-winning Rosewood Hotel and other master chefs. These students will engage in live cooking demonstrations, explore authentic Mexican culinary techniques, and gain valuable exposure to international hospitality standards. This real-world experience will provide not only practical industry skills but also cultural competence, adaptability, and professional networking opportunities — qualities essential in today’s global job market.

Palm Springs Sister Cities is proud to support these students, as it did during the Palm Springs International Food & Wine Festival, where San Miguel de Allende chefs impressed attendees with their passion, precision, and dedication to their craft. The collaboration fostered a spirit of exchange, and now, we’re ready to take it to the next level.

A Vision for the Future

With a proven model in place from COD’s successful hospitality exchange program in Japan, this new initiative aims to evolve into a long-term internship and work-based learning program, creating a replicable playbook for future exchanges across Palm Springs’ sister cities. The goal? To cultivate global professionals who are ready to lead, innovate, and redefine the culinary and hospitality industry.
